Ingredients

  • 1 pound ground chicken
  • 1/2 cup finely chopped pistachios
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic, minced
  • 1/4 cup finely chopped fresh parsley
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine ground chicken, chopped pistachios, breadcrumbs, Parmesan cheese, egg, garlic, parsley, oregano, salt, and pepper.
  3. Mix until just combined, being careful not to overmix.
  4. Form the mixture into small meatballs and place them evenly on the prepared baking sheet.
  5. Drizzle or brush the meatballs with olive oil.
  6. Bake for 18–22 minutes or until the meatballs are cooked through and lightly golden.
