Description

A classic French-inspired potage St. Germain featuring fresh peas and bright mint, blended into a silky, vibrant green soup.


Ingredients

  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 4 cups fresh or frozen green peas
  • 4 cups vegetable broth
  • 1/2 cup fresh mint leaves
  • 1/2 cup heavy cream
  • Salt to taste
  • Black pepper to taste
  • Lemon juice, to taste

Instructions

  1. Heat butter and olive oil in a large pot over medium heat.
  2. Add chopped onion and cook until soft and translucent, about 5 minutes.
  3. Stir in garlic and cook for 1 minute until fragrant.
  4. Add peas and vegetable broth, bring to a boil, then reduce heat and simmer for 10 minutes.
  5. Remove from heat and add fresh mint leaves.
  6. Blend the soup until smooth using an immersion blender or countertop blender.
  7. Return soup to the pot, stir in heavy cream, and warm gently.
  8. Season with salt, pepper, and a squeeze of lemon juice to taste.
  9. Serve warm, optionally garnished with extra mint or cream.

  • For a lighter version, substitute cream with milk or omit entirely.
