Description
A classic French-inspired potage St. Germain featuring fresh peas and bright mint, blended into a silky, vibrant green soup.
Ingredients
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups fresh or frozen green peas
- 4 cups vegetable broth
- 1/2 cup fresh mint leaves
- 1/2 cup heavy cream
- Salt to taste
- Black pepper to taste
- Lemon juice, to taste
Instructions
- Heat butter and olive oil in a large pot over medium heat.
- Add chopped onion and cook until soft and translucent, about 5 minutes.
- Stir in garlic and cook for 1 minute until fragrant.
- Add peas and vegetable broth, bring to a boil, then reduce heat and simmer for 10 minutes.
- Remove from heat and add fresh mint leaves.
- Blend the soup until smooth using an immersion blender or countertop blender.
- Return soup to the pot, stir in heavy cream, and warm gently.
- Season with salt, pepper, and a squeeze of lemon juice to taste.
- Serve warm, optionally garnished with extra mint or cream.

- Frozen peas work well and retain vibrant color and flavor.
- For a lighter version, substitute cream with milk or omit entirely.
- Adjust mint to taste for a more subtle or pronounced flavor.
