Ingredients
- 2 medium potatoes, peeled and diced
- 2 cups all-purpose flour

- 1/2 cup milk
- 1 cup shredded mozzarella cheese
- 2 tablespoons grated Parmesan cheese

Instructions
- Boil the potatoes in salted water until tender, then drain and mash until smooth.
- In a large bowl, combine the mashed potatoes, flour, baking powder, salt, olive oil, and milk. Mix until a soft dough forms.
- Divide the dough into equal portions and flatten each piece into a round disc.
- Place mozzarella cheese, Parmesan cheese, and parsley in the center of each disc. Fold and seal the dough around the filling.
- Gently flatten each filled dough ball into a thick round bread.
- Heat a lightly greased skillet over medium-low heat.
- Cook each bread for 5 to 6 minutes per side until golden brown and cooked through.
- Serve warm while the cheese is melted and gooey.
