Ingredients

  • 2 medium potatoes, peeled and diced
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil
  • 1/2 cup milk
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons grated Parmesan cheese
  • 2 tablespoons chopped parsley
  • Butter or oil for cooking

Instructions

  1. Boil the potatoes in salted water until tender, then drain and mash until smooth.
  2. In a large bowl, combine the mashed potatoes, flour, baking powder, salt, olive oil, and milk. Mix until a soft dough forms.
  3. Divide the dough into equal portions and flatten each piece into a round disc.
  4. Place mozzarella cheese, Parmesan cheese, and parsley in the center of each disc. Fold and seal the dough around the filling.
  5. Gently flatten each filled dough ball into a thick round bread.
  6. Heat a lightly greased skillet over medium-low heat.
  7. Cook each bread for 5 to 6 minutes per side until golden brown and cooked through.
  8. Serve warm while the cheese is melted and gooey.
