Description

Sweet roasted blueberries infused with honey, lemon zest, and herbs served over creamy brie on warm cinnamon toast. A simple yet elegant sweet-savory dish perfect for brunch or dessert.


Ingredients

  • 10.5 oz fresh blueberries
  • 1 tsp honey
  • Pinch of salt
  • 1/2 tsp freshly cracked black pepper
  • 10 juniper berries (crushed)
  • 1 tsp vanilla
  • 1 sprig of thyme
  • Zest of 1 lemon
  • 4 slices of cinnamon toast
  • 34 oz brie cheese

Instructions

  1. Preheat oven to 400°F and line a baking sheet with parchment paper.
  2. Spread the blueberries in a single layer on the prepared baking sheet.
  3. Drizzle honey over the blueberries and sprinkle with salt, black pepper, crushed juniper berries, vanilla, thyme, and lemon zest.
  4. Roast for about 20 minutes until the blueberries soften and release juices. Remove from the oven and let cool slightly.
  5. If desired, place the brie in the warm oven briefly to soften.
  6. Top each slice of warm cinnamon toast with 1.5 to 2 oz of brie cheese.
  7. Spoon the roasted blueberries over the brie and optionally top with another slice of cinnamon toast.
  8. Serve warm.

Notes

  • Serve immediately for best texture and flavor.
  • Blueberries can also be enjoyed cold if prepared in advance.
  • Substitute raspberries or blackberries if desired.
  • Walnuts or pecans can be added for extra crunch.
