Ingredients

  • 1 prepared pizza dough
  • 1 tablespoon olive oil
  • 1/2 cup ricotta cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 cups arugula
  • 1/2 cup cherry tomatoes (halved)
  • 1/4 cup shaved Parmesan cheese
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • Salt and black pepper to taste
  • Red pepper flakes (optional)

Instructions

  1. Preheat the oven to 475°F (245°C). Roll out the pizza dough onto a baking sheet or pizza stone.
  2. Brush the dough with olive oil and spread ricotta evenly over the surface. Sprinkle with mozzarella cheese.
  3. Bake for 10-12 minutes or until the crust is golden and the cheese is bubbly.
  4. In a bowl, toss arugula and cherry tomatoes with lemon juice, lemon zest, salt, and pepper.
  5. Remove the pizza from the oven and let it cool slightly. Top with the fresh salad mixture.
  6. Finish with shaved Parmesan and red pepper flakes if desired. Slice and serve immediately.
