Description

This sausage and egg keto breakfast casserole is hearty, cheesy, and packed with savory flavor from breakfast sausage, cheddar cheese, and fresh herbs. It’s an easy low carb make-ahead breakfast perfect for feeding a crowd.


Ingredients

  • 3 cups spinach leaves, fresh and uncooked
  • 4 scallions, sliced, white and green parts separated
  • 1/4 cup chopped fresh parsley
  • 16 ounces breakfast sausage
  • 12 large eggs
  • 3/4 cup heavy cream
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon freshly cracked black pepper
  • 2 cups freshly shredded cheddar cheese

Instructions

  1. Preheat the oven to 375°F. Lightly grease a baking dish.
  2. Layer the spinach leaves, white parts of the scallions, and chopped parsley evenly in the bottom of the baking dish.
  3. In a large skillet over medium heat, cook the breakfast sausage until browned and crumbled, stirring frequently and breaking it into small pieces.
  4. In a large mixing bowl, whisk together the eggs, heavy cream, garlic powder, salt, and black pepper until smooth.
  5. Fold the shredded cheddar cheese into the egg mixture.
  6. Spread the cooked sausage evenly over the spinach mixture in the baking dish.
  7. Pour the egg and cheese mixture evenly over the sausage.
  8. Bake for 20 to 25 minutes, or until the casserole is firm and the eggs are fully cooked.
  9. Remove from the oven, slice into 12 squares, and garnish with the green scallion tops and additional cheese if desired.
  10. Serve warm.

Notes

  • Use spicy or mild breakfast sausage depending on your preference.
  • Freshly shredded cheese melts more smoothly than pre-shredded cheese.
  • This casserole can be made ahead and refrigerated for up to 4 days.
