Description
This sausage and egg keto breakfast casserole is hearty, cheesy, and packed with savory flavor from breakfast sausage, cheddar cheese, and fresh herbs. It’s an easy low carb make-ahead breakfast perfect for feeding a crowd.
Ingredients
- 3 cups spinach leaves, fresh and uncooked
- 4 scallions, sliced, white and green parts separated
- 1/4 cup chopped fresh parsley
- 16 ounces breakfast sausage
- 12 large eggs
- 3/4 cup heavy cream
- 1/2 teaspoon garlic powder
- 1/2 teaspoon kosher salt
- 1/4 teaspoon freshly cracked black pepper
- 2 cups freshly shredded cheddar cheese
Instructions
- Preheat the oven to 375°F. Lightly grease a baking dish.
- Layer the spinach leaves, white parts of the scallions, and chopped parsley evenly in the bottom of the baking dish.
- In a large skillet over medium heat, cook the breakfast sausage until browned and crumbled, stirring frequently and breaking it into small pieces.
- In a large mixing bowl, whisk together the eggs, heavy cream, garlic powder, salt, and black pepper until smooth.
- Fold the shredded cheddar cheese into the egg mixture.
- Spread the cooked sausage evenly over the spinach mixture in the baking dish.
- Pour the egg and cheese mixture evenly over the sausage.
- Bake for 20 to 25 minutes, or until the casserole is firm and the eggs are fully cooked.
- Remove from the oven, slice into 12 squares, and garnish with the green scallion tops and additional cheese if desired.
- Serve warm.

- Use spicy or mild breakfast sausage depending on your preference.
- Freshly shredded cheese melts more smoothly than pre-shredded cheese.
- This casserole can be made ahead and refrigerated for up to 4 days.
