Description

Ingredients

  • 3 medium yellow potatoes, thinly sliced
  • 1 medium onion, thinly sliced
  • 2 cloves garlic, chopped
  • Salt, to taste
  • Pepper, to taste
  • 2 tablespoons all-purpose flour
  • 3 tablespoons unsalted butter
  • 1/3 cup low-sodium chicken broth

Instructions

  1. Place the sliced potatoes, onion, and garlic in a large bowl. Season with salt and pepper and toss well to coat evenly.
  2. Sprinkle the flour over the potato mixture and toss again until everything is lightly coated.
  3. Heat a cast-iron skillet over medium-high heat. Add the butter and allow it to melt completely.
  4. Add the potatoes and onions to the skillet. Cook for about 10 minutes, flipping frequently to prevent sticking or burning.
  5. Pour the chicken broth into the skillet and cover with a lid.
  6. Continue cooking for another 10 minutes, or until the potatoes are tender.
  7. Serve warm.

  • For a vegetarian version, substitute vegetable broth for chicken broth.
  • Russet or red potatoes can also be used if yellow potatoes are unavailable.
