Description

Snezhanka, also known as Snow White Salad, is a creamy Bulgarian yogurt salad made with dill pickles, fresh dill, and garlic. This refreshing dish is perfect as an appetizer, side dish, or dip.


Ingredients

  • 1 tub plain yogurt (725 grams), strained overnight in cheesecloth
  • Pinch of salt
  • 5 large dill pickles, diced or grated cucumber
  • 1/4 cup fresh dill, chopped
  • 2 garlic cloves, minced
  • Drizzle of olive oil
  • Crushed walnuts, optional

Instructions

  1. Place the yogurt in a cheesecloth and allow it to drain overnight until very thick. Alternatively, use thick Greek yogurt and skip this step.
  2. Once strained, transfer the yogurt to a mixing bowl.
  3. Add the salt, diced dill pickles or grated cucumber, fresh dill, and minced garlic.
  4. Mix thoroughly until all ingredients are evenly combined.
  5. Transfer to a serving bowl and drizzle with olive oil.
  6. Top with crushed walnuts and olives if desired, then serve chilled.

Notes

  • Greek yogurt can be used instead of straining regular yogurt.
  • Traditional versions may use cucumber instead of pickles.
  • Serve as a dip with bread, crackers, or fresh vegetables.
  • Store in an airtight container in the refrigerator for 5 to 7 days.
