Ingredients

  • 2 medium zucchini, grated
  • 1/2 teaspoon salt
  • 1 large egg
  • 1/4 cup gluten-free flour
  • 2 tablespoons grated Parmesan cheese
  • 2 tablespoons chopped fresh herbs (such as parsley or chives)
  • 1 clove garlic, minced
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil (for frying)

Instructions

  1. Grate the zucchini and place it in a clean towel. Squeeze out as much moisture as possible.
  2. Transfer the drained zucchini to a bowl and mix with salt, egg, gluten-free flour, Parmesan, herbs, garlic, and pepper until combined.
  3. Heat olive oil in a skillet over medium heat.
  4. Scoop small portions of the mixture into the pan and flatten slightly into fritters.
  5. Cook for 3–4 minutes per side, or until golden brown and crisp.
  6. Remove from the pan and place on a paper towel-lined plate to drain excess oil.
  7. Serve warm.

Notes
