Ingredients
- 1 baguette, sliced
- 4 tbsp olive oil
- 1 clove garlic, minced
- 200 g canned sardines in oil, drained
- 1 small red onion, thinly sliced
- 2 tbsp red wine vinegar
- 1 tsp sugar
- 1 pinch salt
- 1 pinch chili flakes
- Fresh parsley, chopped
Instructions
- Preheat the oven to 180°C (350°F).
- Place the baguette slices on a baking tray, drizzle with olive oil, and toast for 8–10 minutes until golden and crisp.
- In a bowl, combine the sliced red onion, red wine vinegar, sugar, and salt. Mix well and let sit for 10 minutes to pickle.
- In another bowl, mash the sardines lightly with a fork. Add minced garlic, chili flakes, and a drizzle of olive oil, mixing to combine.
- Spread the sardine mixture over each toasted bread slice.
- Top with pickled onions and sprinkle with fresh parsley.
- Serve immediately.

- You can substitute sardines with anchovies or tuna for a different flavor.
