Ingredients

  • 1 baguette, sliced
  • 4 tbsp olive oil
  • 1 clove garlic, minced
  • 200 g canned sardines in oil, drained
  • 1 small red onion, thinly sliced
  • 2 tbsp red wine vinegar
  • 1 tsp sugar
  • 1 pinch salt
  • 1 pinch chili flakes
  • Fresh parsley, chopped

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Place the baguette slices on a baking tray, drizzle with olive oil, and toast for 8–10 minutes until golden and crisp.
  3. In a bowl, combine the sliced red onion, red wine vinegar, sugar, and salt. Mix well and let sit for 10 minutes to pickle.
  4. In another bowl, mash the sardines lightly with a fork. Add minced garlic, chili flakes, and a drizzle of olive oil, mixing to combine.
  5. Spread the sardine mixture over each toasted bread slice.
  6. Top with pickled onions and sprinkle with fresh parsley.
  7. Serve immediately.
