Description

Juicy chicken breasts stuffed with a creamy spinach and cheese filling, baked until golden and flavorful. A satisfying and elegant main dish perfect for weeknight dinners or entertaining.


Ingredients

  • 4 boneless skinless chicken breasts (approximately 2 pounds, 4 equally sized pieces)
  • 3 tablespoons olive oil, divided
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/2 cup yellow onion, small diced
  • 2 teaspoons minced garlic
  • 5 ounces fresh baby spinach (approximately 3 cups)
  • 4 ounces cream cheese, room temperature
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated parmesan cheese

Instructions

  1. Preheat oven to 375°F. Spray a 9×13 baking dish with non-stick cooking spray and set aside.
  2. Trim excess fat from the chicken breasts. Carefully cut a pocket into each breast without slicing all the way through. Set aside.
  3. In a small bowl, mix 2 tablespoons olive oil, salt, pepper, smoked paprika, garlic powder, and onion powder.
  4. Heat 1 tablespoon olive oil in a skillet over medium-high heat. Add diced onion and garlic; cook for 1 minute. Add spinach and cook for 2–3 minutes until wilted. Remove from heat and let cool slightly.
  5. In a large bowl, combine cream cheese, mozzarella, parmesan, and the cooled spinach mixture. Stir until evenly mixed.
  6. Stuff each chicken breast with an equal portion of the spinach mixture and place in the prepared baking dish.
  7. Brush the tops of the stuffed chicken breasts with the olive oil seasoning mixture.
  8. Bake for 35–40 minutes or until the internal temperature reaches 165°F and the tops are lightly golden.
  9. Remove from oven and rest for 5–10 minutes before serving.

Notes

  • Use toothpicks to secure the chicken if the filling spills out.
  • Frozen spinach can be used; thaw and drain thoroughly first.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Serve with rice, pasta, or a fresh salad for a complete meal.
