Description

A flavorful Greek seafood dish featuring tender calamari cooked in a rich tomato sauce with herbs and spices, perfect for a comforting meal.


Ingredients

  • 500 g calamari, cleaned and cut into rings
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, finely chopped
  • 400 g canned chopped tomatoes
  • 1 tablespoon tomato paste
  • 1 teaspoon sugar
  • 50 ml white wine
  • 1 teaspoon dried oregano
  • Salt, to taste
  • Black pepper, to taste
  • Fresh parsley, finely chopped

Instructions

  1. Heat the olive oil in a pan over medium heat and sauté the onion until soft and translucent.
  2. Add the garlic and cook for another minute until fragrant.
  3. Add the calamari and sauté for 2–3 minutes until lightly browned.
  4. Deglaze with white wine and let it simmer until the alcohol evaporates.
  5. Add the chopped tomatoes, tomato paste, sugar, oregano, salt, and pepper. Stir well.
  6. Reduce the heat and let the mixture simmer for about 20–25 minutes until the sauce thickens and the calamari becomes tender.
  7. Sprinkle with fresh parsley before serving and adjust seasoning if needed.

Notes

  • Do not overcook the calamari to avoid it becoming rubbery.
  • You can serve this dish with crusty bread or over rice.
  • Add chili flakes for a spicier version.
  • Leftovers can be stored in the refrigerator for up to 2 days.
