A flavorful Greek seafood dish featuring tender calamari cooked in a rich tomato sauce with herbs and spices, perfect for a comforting meal.
Ingredients
- 500 g calamari, cleaned and cut into rings
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 2 cloves garlic, finely chopped
- 400 g canned chopped tomatoes
- 1 tablespoon tomato paste
- 1 teaspoon sugar
- 50 ml white wine
- 1 teaspoon dried oregano
- Salt, to taste
- Black pepper, to taste
- Fresh parsley, finely chopped
Instructions
- Heat the olive oil in a pan over medium heat and sauté the onion until soft and translucent.
- Add the garlic and cook for another minute until fragrant.
- Add the calamari and sauté for 2–3 minutes until lightly browned.
- Deglaze with white wine and let it simmer until the alcohol evaporates.
- Add the chopped tomatoes, tomato paste, sugar, oregano, salt, and pepper. Stir well.
- Reduce the heat and let the mixture simmer for about 20–25 minutes until the sauce thickens and the calamari becomes tender.
- Sprinkle with fresh parsley before serving and adjust seasoning if needed.
Notes
- Do not overcook the calamari to avoid it becoming rubbery.
- You can serve this dish with crusty bread or over rice.
- Add chili flakes for a spicier version.
- Leftovers can be stored in the refrigerator for up to 2 days.
