Description

Sweet and buttery strawberry crumble bars layered with a fresh strawberry filling and a golden oat crumble topping. A perfect dessert for spring and summer gatherings.


Ingredients

  • 2 cups strawberries, diced
  • 2 tablespoons maple syrup
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 tablespoon cornstarch
  • 1 1/2 cups rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup butter, melted

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a bowl, mix diced strawberries with maple syrup, lemon juice, vanilla extract, and cornstarch. Set aside.
  3. In another bowl, combine oats, flour, brown sugar, salt, and baking soda. Stir in melted butter until crumbly.
  4. Press about two-thirds of the crumble mixture into the prepared pan to form the crust.
  5. Spread the strawberry mixture evenly over the crust.
  6. Sprinkle the remaining crumble mixture over the top.
  7. Bake for 35–40 minutes or until the top is golden brown.
  8. Allow to cool completely before slicing into bars and serving.

Notes

  • Store bars in an airtight container in the refrigerator for up to 5 days.
  • These bars can be frozen for up to 2 months.
  • Swap strawberries with raspberries or blueberries if desired.
  • Let the bars cool fully to help them set properly before cutting.
