Description

These Indian-style stuffed eggs are packed with a vibrant green chutney made from fresh herbs, chillies, and spices. They are quick to prepare and make a flavorful appetizer or snack.


Ingredients

  • 8 boiled eggs
  • 1/2 cup coriander leaves
  • 2 sprigs curry leaves
  • 2 green chillies
  • 2 sambar onions
  • 1 clove garlic
  • 1/4 teaspoon salt (adjust to taste)
  • 1/4 teaspoon crushed pepper
  • 1/4 teaspoon turmeric powder
  • Juice of 1/2 lemon

Instructions

  1. Prepare the green chutney by adding the coriander leaves, curry leaves, green chillies, sambar onions, garlic, salt, crushed pepper, turmeric powder, and lemon juice into a mortar and pestle.
  2. Crush the mixture into a smooth paste without adding water, as the onion, garlic, and lemon juice provide enough moisture.
  3. Make one long slit in each boiled egg without cutting it fully in half.
  4. Stuff about 1 to 2 teaspoons of the green chutney paste into each egg slit.
  5. Serve immediately as an appetizer or snack.

  • You can use a small food processor instead of a mortar and pestle for convenience.
