Ingredients
- 2 cups mashed sweet potato
- 2 cups all-purpose flour
- 1 cup brown sugar
- 1/2 cup granulated sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1/4 cup milk
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon nutmeg
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup chopped walnuts
Instructions
- Preheat the oven to 350°F (175°C). Grease and line a loaf pan with parchment paper.
- In a large bowl, whisk together the mashed sweet potato, brown sugar, granulated sugar, oil, eggs, milk, and vanilla extract until smooth.
- In another bowl, combine the flour, cinnamon, nutmeg, baking soda, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients and stir until just combined.
- Fold in the chopped walnuts.
- Pour the batter into the prepared loaf pan and smooth the top.
- Bake for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Notes
- You can substitute walnuts with pecans or omit them entirely.
- Store the bread in an airtight container for up to 4 days.
