Description
Thandai Phirni is a rich and creamy Indian rice pudding infused with aromatic thandai masala, saffron, pistachios, and rose petals. This chilled dessert is delicately spiced and perfect for festive celebrations or special occasions.
Ingredients
- ¼ cup traditional basmati rice
- 4½ cups full-fat milk
- ⅓ cup sugar
- 10 strands saffron
- ¼ cup Thandai Masala
- 1 tablespoon sliced pistachios
- 1 tablespoon dried rose petals
Instructions
- Rinse the basmati rice thoroughly and soak it in water for 20 minutes.
- Drain the rice and spread it on a clean kitchen towel. Cover with another towel and gently pat dry.
- Transfer the rice to a blender and pulse until it reaches a coarse, semolina-like texture.
- Rinse a heavy-bottomed pot with water, leaving a spoonful inside to help prevent scorching.
- Pour the milk into the pot and cook over medium heat for 15 minutes, stirring frequently.
- Grind the saffron strands into a fine powder using a mortar and pestle.
- Stir the ground rice into the milk and cook for 10 to 15 minutes, stirring often and scraping the sides of the pot.
- Add the sugar, saffron, and Thandai Masala. Continue cooking for another 10 minutes until the mixture thickens to a creamy consistency.
- Remove from the heat and let the phirni cool to room temperature.
- Cover and refrigerate overnight for best flavor and texture, or chill individual servings for at least 30 minutes.
- Garnish with sliced pistachios and dried rose petals before serving.
Notes
- Traditional clay bowls can be used for serving authentic phirni.
- The pudding thickens further as it chills, so avoid overcooking.
- For a richer flavor, use high-quality full-fat milk.
- Store refrigerated for up to 3 days.
