Description

A comforting baked strata made with Thanksgiving leftovers, layered with bread, turkey, cheese, and herbs, then soaked in a rich egg mixture and baked until golden.


Ingredients

  • 14 ounce Italian or French bread loaf (cut into 1 inch cubes)
  • 24 tbsp olive oil
  • 4 garlic cloves (minced, OR 1 tsp garlic powder)
  • 1 cup leftover gravy
  • 4 oz cheddar cheese or gruyere (or a mix of both, grated)
  • 10 eggs
  • 1 1/2 cup milk or half and half
  • 1/2 tsp kosher salt (plus more to taste)
  • 1 tsp black pepper (optional)
  • 2 sprigs rosemary (stalk removed)
  • 3 sprigs thyme (leaves only)
  • 3 cups leftover turkey (cubed or shredded)
  • 810 slices bacon (cooked and cut into bite-sized pieces, optional)
  • 12 oz cheddar and mozzarella (cubed into 1/2 inch pieces)
  • 1/2 red onion (thinly sliced)
  • 1 cup leftover cranberry sauce
  • 1/21 cup sauteed spinach (or chard or brussels sprouts)

Instructions

  1. Preheat oven to 300°F.
  2. Toss bread cubes with olive oil and garlic until evenly coated.
  3. Spread on a baking tray and bake for 20–30 minutes, tossing occasionally, until dry and crisp but not browned. Cool completely.
  4. Heat the gravy until hot but not boiling, then stir in grated cheese until partially melted. Set aside.
  5. Whisk together eggs, milk, salt, and black pepper in a large bowl. Set aside.
  6. Chop thyme and rosemary and prepare remaining ingredients in separate bowls.
  7. Butter a 9 x 13 inch baking dish.
  8. Layer half the bread cubes in the dish and sprinkle with half the herbs.
  9. Add half the turkey, bacon, cheese, onions, cranberry sauce, and all sautéed greens.
  10. Repeat layering with remaining turkey, bacon, cheese, onions, and cranberry sauce.
  11. Top with remaining bread cubes, herbs, and black pepper.
  12. Pour the egg mixture evenly over the strata, pressing gently to soak.
  13. Pour the cheesy gravy evenly on top.
  14. Cover and let sit for at least 1 hour or refrigerate up to 24 hours.
  15. Preheat oven to 350°F.
  16. Bake uncovered for 45–50 minutes, covering with foil if the top browns too quickly.
  17. Let rest for 10 minutes before serving.

Notes

  • Can be assembled ahead and refrigerated overnight for deeper flavor.
  • Substitute turkey with chicken or omit bacon for a lighter version.
  • Use any leftover vegetables you have on hand.
  • If gravy is unavailable, simply add extra cheese on top.
  • Store leftovers in the refrigerator for up to 3 days and reheat before serving.
