Description
A creamy, tropical pina colada mix that blends coconut, pineapple, and lime for a refreshing cocktail or mocktail in minutes.
Ingredients
- 1/2 cup cream of coconut (Coco Lopez)
- 3 ounces pineapple juice
- 2 ounces white rum
- 2 ounces dark rum
- 2/3 ounce lime juice
- 5–6 frozen pineapple chunks
- 1 1/2 cups ice
Instructions
- For frozen pina coladas: Place all ingredients in a blender and puree until smooth and frothy. Pour into hurricane glasses and serve immediately.
- For virgin pina coladas: Combine cream of coconut, 7 ounces pineapple juice, lime juice, pineapple chunks, and ice in a blender (omit the rums). Puree until smooth and frothy, then pour into glasses and serve.
- For pina colada on the rocks: In a 2-cup measuring pitcher, mix cream of coconut, pineapple juice, both rums, and lime juice. Stir well, then pour over ice-filled glasses and serve.
Notes
- Adjust sweetness by adding more or less cream of coconut.
- Use fresh pineapple for a brighter flavor if available.
- Chill glasses beforehand for a colder drink experience.
- Store leftover mix in the refrigerator for up to 1 day and re-blend before serving.
