Description
Torrijas are a classic Spanish dessert similar to French toast, featuring bread soaked in sweet infused milk, fried until golden, and finished with cinnamon sugar and honey.
Ingredients
- 6 thick slices stale bread
- 3 cups whole milk
- 2 tablespoons honey
- 2 tablespoons granulated sugar
- 1 cinnamon stick (or 1/2 teaspoon ground cinnamon)
- 2 wide strips lemon or orange peel
- 2 large eggs
- Extra virgin olive oil (for frying)
- 1/2 cup granulated sugar
- 2 teaspoons ground cinnamon
- Honey (optional, for drizzling)
Instructions
- In a saucepan over medium heat, combine milk, honey, sugar, cinnamon stick, and citrus peel. Bring to a simmer, then remove from heat and let cool to lukewarm (about 30 minutes), stirring occasionally. Remove cinnamon stick and peel.
- Arrange bread slices in a shallow dish and pour the cooled milk over them. Let soak for about 30 minutes until fully absorbed.
- Mix 1/2 cup sugar with ground cinnamon in a small bowl to make the topping.
- Beat eggs in a shallow bowl. Heat olive oil in a large pan over medium heat. Line a plate with paper towels.
- Dip each soaked bread slice into the beaten eggs, then fry in hot oil until golden on both sides (about 1–2 minutes per side). Transfer to the lined plate.
- Serve warm, sprinkled with cinnamon sugar and drizzled with honey if desired.
Notes
- Use slightly stale or day-old bread for best absorption without falling apart.
- Handle soaked bread gently to prevent breaking.
- Orange peel can be used instead of lemon for a sweeter citrus flavor.
- Best served warm but can be reheated lightly.
