Description

Torrijas are a classic Spanish dessert similar to French toast, featuring bread soaked in sweet infused milk, fried until golden, and finished with cinnamon sugar and honey.


Ingredients

  • 6 thick slices stale bread
  • 3 cups whole milk
  • 2 tablespoons honey
  • 2 tablespoons granulated sugar
  • 1 cinnamon stick (or 1/2 teaspoon ground cinnamon)
  • 2 wide strips lemon or orange peel
  • 2 large eggs
  • Extra virgin olive oil (for frying)
  • 1/2 cup granulated sugar
  • 2 teaspoons ground cinnamon
  • Honey (optional, for drizzling)

Instructions

  1. In a saucepan over medium heat, combine milk, honey, sugar, cinnamon stick, and citrus peel. Bring to a simmer, then remove from heat and let cool to lukewarm (about 30 minutes), stirring occasionally. Remove cinnamon stick and peel.
  2. Arrange bread slices in a shallow dish and pour the cooled milk over them. Let soak for about 30 minutes until fully absorbed.
  3. Mix 1/2 cup sugar with ground cinnamon in a small bowl to make the topping.
  4. Beat eggs in a shallow bowl. Heat olive oil in a large pan over medium heat. Line a plate with paper towels.
  5. Dip each soaked bread slice into the beaten eggs, then fry in hot oil until golden on both sides (about 1–2 minutes per side). Transfer to the lined plate.
  6. Serve warm, sprinkled with cinnamon sugar and drizzled with honey if desired.

  • Use slightly stale or day-old bread for best absorption without falling apart.
  • Handle soaked bread gently to prevent breaking.
  • Orange peel can be used instead of lemon for a sweeter citrus flavor.
