Description

Ingredients

  • 2 cups short-grain paella rice
  • 4 cups seafood stock
  • 1 lb shrimp, peeled and deveined
  • 1 lb mussels, cleaned
  • 1/2 lb calamari rings
  • 1 small onion, finely chopped
  • 1 red bell pepper, sliced
  • 3 garlic cloves, minced
  • 2 tomatoes, grated
  • 1/4 cup olive oil
  • 1 tsp smoked paprika
  • 1 pinch saffron threads
  • 1/2 cup peas
  • 1 lemon, cut into wedges
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a large paella pan over medium heat.
  2. Sauté the onion, garlic, and red bell pepper until softened.
  3. Add the grated tomatoes and cook for a few minutes until thickened.
  4. Stir in the smoked paprika and saffron threads.
  5. Add the rice and stir to coat it evenly with the flavorful mixture.
  6. Pour in the seafood stock and season with salt and black pepper.
  7. Arrange the shrimp, mussels, and calamari evenly over the rice.
  8. Add the peas and simmer uncovered over medium heat for 18 to 20 minutes without stirring.
  9. Cook until the rice is tender and the seafood is fully cooked. Increase the heat briefly at the end to create a crispy socarrat if desired.
  10. Remove from heat and let the paella rest for 5 minutes.
  11. Garnish with fresh parsley and lemon wedges before serving.
