Description

Traditional Tilachi Chikki is a crisp and crunchy Indian sweet made with roasted sesame seeds and caramelized sugar. Lightly flavored with cardamom, these sesame crisps are perfect for festive treats or snacking.


Ingredients

  • 1 cup brown sesame seeds
  • 1 cup sugar
  • 1 teaspoon ghee or oil
  • ⅛ teaspoon salt
  • ⅛ teaspoon ground cardamom

Instructions

  1. Add the sesame seeds to a heavy-bottomed pan and roast over medium heat for about 5 minutes until lightly browned and aromatic. Transfer the roasted sesame seeds to a bowl and set aside.
  2. In the same pan, add the sugar and ghee or oil. Stir in the ground cardamom and salt. Cook over medium-low heat, stirring frequently, until the sugar fully melts into a syrup. The sugar may crystallize at first, but continue stirring and breaking up the lumps as it melts. This process takes about 6 to 8 minutes.
  3. Once the syrup is ready, reduce the heat to low and quickly stir in the roasted sesame seeds until evenly coated.
  4. Carefully pour the mixture onto a parchment-lined surface. Using a greased silicone spatula or rolling pin, spread the mixture into a thin, even layer while still hot.
  5. While the mixture is still warm, use a knife or pizza cutter to cut it into diamond or square shapes.
  6. Allow the chikki to cool completely, then break along the cut lines.
  7. Store the sesame crisps in an airtight container after completely cooling.

  • Work quickly when spreading and cutting the mixture, as it hardens fast.
  • Grease the spatula or rolling pin with ghee or oil to prevent sticking.
  • Store in an airtight container at room temperature for up to 2 weeks.
  • You can substitute jaggery for sugar for a more traditional flavor variation.
