Description
A comforting Turkish dish of Swiss chard gently braised with tomatoes, rice, and aromatic spices, finished with olive oil and optional yogurt.
Ingredients
- 2 tablespoons extra virgin olive oil (plus more to serve)
- 1 medium onion, finely chopped
- 1 red chili pepper, deseeded and finely chopped
- 4 garlic cloves, finely chopped
- 1 tablespoon double concentrated tomato paste
- 1 cup canned diced tomatoes
- 1 pound Swiss chard, cleaned and roughly chopped
- 1/2 cup rice, rinsed
- 2 cups hot water
- Sea salt
- Freshly ground black pepper
- Plain yogurt (optional, to serve)
Instructions
- Heat the olive oil in a large saucepan over medium-high heat. Add the chopped onion and sauté for 3–4 minutes until softened.
- Add the chili pepper, garlic, tomato paste, and diced tomatoes. Stir well and cook for 2 minutes.
- Add the chopped Swiss chard and cook for 2–3 minutes until wilted. Stir in the rinsed rice.
- Pour in the hot water, season with salt and pepper, and stir. Cover and cook over medium-low heat for 20–25 minutes until the rice and vegetables are tender.
- Turn off the heat and let rest, covered, for 10 minutes. Serve with a drizzle of olive oil and optional yogurt.
Notes
- Adjust chili quantity based on preferred spice level.
- Can be served warm or at room temperature.
- Store leftovers in the refrigerator for up to 3 days.
- Use vegetable broth instead of water for extra flavor.
- Omit yogurt for a vegan version.
