Description

A comforting Turkish dish of Swiss chard gently braised with tomatoes, rice, and aromatic spices, finished with olive oil and optional yogurt.


Ingredients

  • 2 tablespoons extra virgin olive oil (plus more to serve)
  • 1 medium onion, finely chopped
  • 1 red chili pepper, deseeded and finely chopped
  • 4 garlic cloves, finely chopped
  • 1 tablespoon double concentrated tomato paste
  • 1 cup canned diced tomatoes
  • 1 pound Swiss chard, cleaned and roughly chopped
  • 1/2 cup rice, rinsed
  • 2 cups hot water
  • Sea salt
  • Freshly ground black pepper
  • Plain yogurt (optional, to serve)

Instructions

  1. Heat the olive oil in a large saucepan over medium-high heat. Add the chopped onion and sauté for 3–4 minutes until softened.
  2. Add the chili pepper, garlic, tomato paste, and diced tomatoes. Stir well and cook for 2 minutes.
  3. Add the chopped Swiss chard and cook for 2–3 minutes until wilted. Stir in the rinsed rice.
  4. Pour in the hot water, season with salt and pepper, and stir. Cover and cook over medium-low heat for 20–25 minutes until the rice and vegetables are tender.
  5. Turn off the heat and let rest, covered, for 10 minutes. Serve with a drizzle of olive oil and optional yogurt.

Notes

  • Adjust chili quantity based on preferred spice level.
  • Can be served warm or at room temperature.
  • Store leftovers in the refrigerator for up to 3 days.
  • Use vegetable broth instead of water for extra flavor.
  • Omit yogurt for a vegan version.
