Ingredients
- 1 cup vegan yogurt, plain unsweetened
- 1/2 lemon, juiced
- 1/2 cup cucumber, grated and squeezed well to remove excess water
- 1 clove garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 30 oz chickpeas, drained and rinsed
- 1 1/2 cups cucumber, cubed
- 1/4 cup fresh dill, finely chopped
- 1/4 cup pistachios, chopped
- Warm naan or pita, for serving
Instructions
- In a medium bowl, combine the vegan yogurt, lemon juice, grated cucumber, minced garlic, salt, and black pepper. Stir until smooth and creamy.
- Add the chickpeas, cubed cucumber, fresh dill, and chopped pistachios.
- Toss everything together until evenly coated in the tzatziki dressing.
- Taste and adjust seasoning with additional salt, lemon juice, or black pepper if desired.
- Serve immediately with warm naan or pita, or refrigerate for meal prep.
