Description

Rich and indulgent double chocolate chip cookies with a deep cocoa flavor and gooey chocolate chunks. Perfectly chewy with crisp edges and a soft center.


Ingredients

  • 226 g unsalted butter (2 sticks, melted and cooled)
  • 200 g dark brown sugar (1 cup)
  • 200 g granulated white sugar (1 cup)
  • 2 tsp instant coffee granules (optional)
  • 1 tsp sea salt (use 1/2 tsp if preferred)
  • 1 tbsp vanilla extract
  • 2 eggs
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 280 g all-purpose flour (2 1/4 cups)
  • OR 127 g bread flour + 125 g all-purpose flour
  • 70 g Dutch cocoa powder (2/3 cup)
  • 340 g chopped semisweet or white chocolate (or mix)
  • Extra sea salt flakes for topping

Instructions

  1. In a mixing bowl, combine melted butter, brown sugar, white sugar, coffee, salt, and vanilla. Mix on medium speed until creamy but not overmixed.
  2. Add eggs and mix until just incorporated.
  3. In a separate bowl, sift together flour, cocoa powder, baking soda, and baking powder.
  4. Add dry ingredients in two additions on low speed until mostly combined.
  5. Mix in about 3/4 of the chocolate chunks on low speed.
  6. Let the dough rest, covered, for at least 15 minutes.
  7. Scoop dough into portions using a 3 tbsp scoop onto a parchment-lined baking sheet.
  8. Top with remaining chocolate and a sprinkle of sea salt.
  9. Chill dough for at least 1 hour or overnight for best results.
  10. Preheat oven to 350°F and line a baking sheet with parchment.
  11. Bake 4–6 cookies at a time for 12–15 minutes depending on desired texture.
  12. Cool cookies on the tray for 10–15 minutes, then transfer to a wire rack.
  13. Serve warm or at room temperature.
