Description

Soft and chewy vegan chocolate chip cookies with crisp edges and gooey centers. Made with simple ingredients, these cookies are perfect for a quick and satisfying treat.


Ingredients

  • 1/2 cup softened vegan butter
  • 3/4 cup brown sugar
  • 1/2 cup white sugar
  • 1/4 cup apple sauce
  • 2 teaspoons vanilla extract
  • 2 cups gluten free all purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 to 1 1/4 cups semi sweet chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Add softened vegan butter, brown sugar, and white sugar to a large bowl and beat together for 30–60 seconds until combined and creamy.
  3. Beat in the apple sauce and vanilla extract until well incorporated.
  4. Add the flour, baking soda, and salt. Mix on low speed until just combined, being careful not to overmix.
  5. Fold in the chocolate chips. The dough will be thick.
  6. Scoop the dough into balls using a medium cookie scoop and place on the prepared baking sheet, leaving space between each cookie.
  7. Optionally, shape each cookie by adding a small piece of dough on top for a crinkled appearance.
  8. Bake for 12–16 minutes, until edges are golden brown and centers are still soft.
  9. Optionally, use a round cutter to shape cookies immediately after baking for a uniform look.
  10. Let cookies cool on the baking sheet for 15 minutes, then transfer to a wire rack to cool completely.

Notes

  • Use less chocolate chips if you prefer a less sweet cookie.
  • Cookies will continue to firm up as they cool.
  • Sprinkle with flaky salt after baking for extra flavor.
  • Store in an airtight container at room temperature for up to 4 days.
