Description
These vegan sticky sesame chickpeas are savory, slightly sweet, and coated in a rich, glossy sauce. A quick and satisfying plant-based meal perfect for busy weeknights.
Ingredients
- 2 (15 ounce) cans chickpeas
- 3–4 large cloves garlic
- 1 tablespoon avocado oil or olive oil
- 1.5 tablespoons toasted sesame oil
- 1/3 cup low sodium tamari or soy sauce
- 3 tablespoons maple syrup
- 2 teaspoons rice vinegar
- 1/2 teaspoon ground ginger
- 1 tablespoon tapioca starch
- 1/4 cup low sodium vegetable broth or water (divided)
- 1/2 teaspoon red pepper flakes (optional)
Instructions
- Drain and rinse the chickpeas, then set aside.
- Mince the garlic and add it to a sauté pan with the avocado or olive oil.
- Sauté over medium heat for a few minutes until fragrant.
- In a small bowl, whisk together the tapioca starch and half of the vegetable broth until smooth. Set aside.
- To the pan, add the soy sauce, sesame oil, maple syrup, rice vinegar, ginger, and the remaining vegetable broth. Whisk to combine.
- Stir in the tapioca mixture and continue mixing.
- When the sauce begins to bubble, add the chickpeas and stir until well coated.
- Reduce heat to low and cook for about 5 minutes, stirring occasionally, until the sauce thickens and becomes sticky.
- Remove from heat and let sit briefly to absorb flavor.
- Serve with steamed broccoli, quinoa, or rice.
Notes
- Use tamari for a gluten-free option.
- Adjust maple syrup to taste for more or less sweetness.
- Add red pepper flakes for heat or omit for a milder dish.
- Store leftovers in an airtight container in the refrigerator for up to 4 days.
- Reheat gently on the stovetop or microwave, adding a splash of water if needed.
