Ingredients
- 1 tablespoon coconut oil
- 1 yellow onion, chopped
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 tablespoon curry powder
- 1 teaspoon ground turmeric
- 1 teaspoon ground cumin
- 1/2 teaspoon ground coriander
- 1 (14-ounce) can coconut milk
- 1/2 cup vegetable broth
- 1 tablespoon lime juice
- 1 tablespoon soy sauce or tamari
- 2 cups cauliflower florets
- 1 cup diced carrots
- 1 red bell pepper, sliced
- 1 cup green beans, trimmed
- 1 cup chickpeas, drained and rinsed
- Salt and pepper to taste
- Fresh cilantro, for garnish
- Cooked rice, for serving
Instructions
- Heat coconut oil in a large pot over medium heat. Add onion and sauté for 5 minutes until softened.
- Add garlic and ginger, cooking for 1 minute until fragrant.
- Stir in curry powder, turmeric, cumin, and coriander and cook for 1 minute to toast the spices.
- Pour in coconut milk and vegetable broth, stirring to combine.
- Add cauliflower, carrots, bell pepper, and green beans. Bring to a simmer and cook for 15 to 20 minutes until vegetables are tender.
- Stir in chickpeas, lime juice, and soy sauce. Simmer for another 5 minutes.
- Season with salt and pepper to taste.
- Serve warm over rice and garnish with fresh cilantro.
