Description

Ingredients

  • 1 tablespoon coconut oil
  • 1 yellow onion, chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon curry powder
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1 (14-ounce) can coconut milk
  • 1/2 cup vegetable broth
  • 1 tablespoon lime juice
  • 1 tablespoon soy sauce or tamari
  • 2 cups cauliflower florets
  • 1 cup diced carrots
  • 1 red bell pepper, sliced
  • 1 cup green beans, trimmed
  • 1 cup chickpeas, drained and rinsed
  • Salt and pepper to taste
  • Fresh cilantro, for garnish
  • Cooked rice, for serving

Instructions

  1. Heat coconut oil in a large pot over medium heat. Add onion and sauté for 5 minutes until softened.
  2. Add garlic and ginger, cooking for 1 minute until fragrant.
  3. Stir in curry powder, turmeric, cumin, and coriander and cook for 1 minute to toast the spices.
  4. Pour in coconut milk and vegetable broth, stirring to combine.
  5. Add cauliflower, carrots, bell pepper, and green beans. Bring to a simmer and cook for 15 to 20 minutes until vegetables are tender.
  6. Stir in chickpeas, lime juice, and soy sauce. Simmer for another 5 minutes.
  7. Season with salt and pepper to taste.
  8. Serve warm over rice and garnish with fresh cilantro.
