Description
Yalanci manti is a comforting Turkish-style pasta dish featuring tender noodles coated in garlicky yogurt and topped with a rich spiced butter sauce.
Ingredients
- 12 oz pasta (such as shells or orecchiette)
- 1 cup plain yogurt
- 2 cloves garlic, minced
- 3 tablespoons butter
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1/2 teaspoon red pepper flakes
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Fresh parsley, chopped (for garnish)
Instructions
- Bring a large pot of salted water to a boil and cook the pasta according to package instructions until tender. Reserve a small amount of pasta water, then drain.
- In a bowl, mix the yogurt with minced garlic and a pinch of salt until smooth.
- In a small saucepan, melt the butter with olive oil over medium heat. Add paprika and red pepper flakes, stirring until fragrant. Remove from heat.
- Toss the warm pasta with a splash of reserved pasta water if needed to loosen, then gently fold in the garlic yogurt until evenly coated.
- Transfer to a serving dish and drizzle the spiced butter sauce over the top.
- Garnish with chopped parsley and serve immediately.
Notes
- Use full-fat yogurt for the creamiest texture.
- Avoid overheating the yogurt to prevent curdling.
- Add cooked ground meat for a more traditional manti-inspired version.
- Adjust spice level by increasing or decreasing red pepper flakes.
- Best served fresh, but leftovers can be gently reheated.
