Description

This creamy 2-Ingredient Yogurt Cheesecake is a quick and lighter no-bake dessert inspired by Japanese cheesecake flavors. Layered with cookies, yogurt, and fun toppings, it is soft, tangy, and perfectly chilled.


Ingredients

  • 3 cups plain Greek yogurt (you may also use vanilla yogurt)
  • 2 graham cracker sheets (about 16 rectangles; coconut sable, Oreos, lady fingers, or Biscoff cookies also work)
  • 2 tablespoons honey
  • 1.5 teaspoons vanilla extract
  • 3 thin Oreos
  • 2 tablespoons cookies and cream powder
  • 1/2 banana (thinly sliced)
  • 1.5 lady finger cookies (broken in half)
  • 1 tablespoon sprinkles
  • 1.5 lady finger cookies (broken in half)
  • 1 tablespoon raspberry chia jam
  • 1/2 graham cracker sheet (4 rectangles)
  • 1/8 teaspoon almond extract (optional)

Instructions

  1. In a medium bowl, mix together the Greek yogurt, vanilla extract, honey, and almond extract if using.
  2. Divide the yogurt mixture evenly among 4 small 6-ounce glass jars or use one larger container.
  3. Stir in optional mix-ins such as cookies and cream powder, sprinkles, or raspberry chia jam if desired.
  4. Layer the cookies and banana slices into the yogurt mixture, leaving a small gap between layers so the yogurt can soften the cookies evenly.
  5. Top each jar with crushed Oreos, graham crackers, or additional cookie crumbs.
  6. Cover and refrigerate for at least 3 hours or until fully set and softened. Larger cookies like lady fingers may require additional chilling time.
