Description
These baked curried tofu cubes are tangy, aromatic, and lightly crisped at the edges. Marinated in lemon and warm spices, they make a flavorful plant-based protein for any meal.
Ingredients
- 1 block super firm tofu, cut into 3/4-inch / 2.5 cm cubes (1 lb / 455 g)
- 4 tablespoons freshly squeezed lemon juice
- 1 1/2 tablespoons avocado oil
- 1/4 teaspoon garlic powder
- 2 teaspoons mild curry powder of choice
- 1/2 teaspoon fine salt
- 1/4 teaspoon freshly grated black pepper
Instructions
- Transfer the tofu to a wide airtight container in a single layer if possible.
- Whisk together the lemon juice, avocado oil, garlic powder, curry powder, salt, and black pepper. Pour over the tofu.
- Cover and gently shake to coat. Refrigerate and marinate for at least 4 hours or up to 24 hours, shaking once midway if possible.
- Preheat the oven to 400°F / 200°C and line a baking sheet with parchment or foil.
- Transfer tofu cubes to the baking sheet, reserving the marinade. Bake for 12 minutes.
- Remove from oven, brush with reserved marinade, and flip or stir the cubes. Brush again.
- Return to the oven and bake for another 7–10 minutes, until lightly browned and crisp at the edges.
- Serve immediately or store as desired.
Notes
- For extra heat, substitute a hot curry powder or use garam masala.
- Shake tofu during marination to ensure even flavor absorption.
- Store in an airtight container in the refrigerator for up to 5 days.
- Freeze for up to 6 weeks and thaw overnight before reheating.
- Serve with rice, salads, or wraps for a complete meal.
