Description

These baked curried tofu cubes are tangy, aromatic, and lightly crisped at the edges. Marinated in lemon and warm spices, they make a flavorful plant-based protein for any meal.


Ingredients

  • 1 block super firm tofu, cut into 3/4-inch / 2.5 cm cubes (1 lb / 455 g)
  • 4 tablespoons freshly squeezed lemon juice
  • 1 1/2 tablespoons avocado oil
  • 1/4 teaspoon garlic powder
  • 2 teaspoons mild curry powder of choice
  • 1/2 teaspoon fine salt
  • 1/4 teaspoon freshly grated black pepper

Instructions

  1. Transfer the tofu to a wide airtight container in a single layer if possible.
  2. Whisk together the lemon juice, avocado oil, garlic powder, curry powder, salt, and black pepper. Pour over the tofu.
  3. Cover and gently shake to coat. Refrigerate and marinate for at least 4 hours or up to 24 hours, shaking once midway if possible.
  4. Preheat the oven to 400°F / 200°C and line a baking sheet with parchment or foil.
  5. Transfer tofu cubes to the baking sheet, reserving the marinade. Bake for 12 minutes.
  6. Remove from oven, brush with reserved marinade, and flip or stir the cubes. Brush again.
  7. Return to the oven and bake for another 7–10 minutes, until lightly browned and crisp at the edges.
  8. Serve immediately or store as desired.

Notes

  • For extra heat, substitute a hot curry powder or use garam masala.
  • Shake tofu during marination to ensure even flavor absorption.
  • Store in an airtight container in the refrigerator for up to 5 days.
  • Freeze for up to 6 weeks and thaw overnight before reheating.
  • Serve with rice, salads, or wraps for a complete meal.
