Juicy chicken thighs simmered in a rich and creamy Boursin garlic herb sauce. This comforting dish is packed with savory flavor and perfect for an easy weeknight meal.
Ingredients
- 4 boneless skinless chicken thighs
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon butter
- 3 tablespoons brown onion, finely diced
- 2–3 cloves garlic, finely minced
- 3/4 cup low or no sodium chicken broth
- 1 (5.2 ounce) package Boursin Fine Herbs & Garlic Cheese
- 2 tablespoons parmesan cheese, finely grated (optional)
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1/2 teaspoon Italian seasoning
- 1/4 teaspoon freshly ground black pepper
Instructions
- Pat the chicken thighs dry thoroughly with paper towels.
- Heat a skillet over medium-low heat. Add olive oil and heat briefly, then add the chicken thighs. Cook for 7–9 minutes until they release easily and develop a light golden crust.
- Add butter to the pan, swirl, and cook the chicken for another minute to deepen the golden color.
- Flip the chicken and cook for 5–6 minutes more, or until the internal temperature reaches 165°F. Add a little more butter if desired and cook another 30–60 seconds.
- Transfer the chicken to a plate and set aside.
- In the same skillet, add more oil if needed and sauté the diced onion for 3–5 minutes. Add garlic and cook for 1 minute more.
- Stir in onion powder, garlic powder, Italian seasoning, and black pepper. Pour in the chicken broth and heat through.
- Add the Boursin cheese and stir until melted and smooth. Simmer for 2–3 minutes.
- Return the chicken to the skillet and cook in the sauce for 2–3 minutes until heated through. If the sauce is too thick, add a splash of water, milk, or cream.
- Sprinkle with parmesan cheese if using and serve warm.
Notes
- Serve over pasta, rice, or mashed potatoes to soak up the sauce.
- Use chicken breasts instead of thighs if preferred, adjusting cook time as needed.
- Add spinach or mushrooms for extra flavor and texture.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
