Description

These Chicken & Black Bean Burritos are loaded with seasoned chicken, black beans, salsa, and melted cheese wrapped in crispy golden tortillas. They are quick, satisfying, and perfect for busy weeknights or meal prep.


Ingredients

  • 2 tablespoons lime juice
  • 1/4 cup water
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon black pepper
  • 3 cups shredded chicken breast
  • 2 green onions, sliced
  • 1 can black beans, drained and rinsed
  • 1 cup salsa
  • 6 large flour or wheat tortillas
  • 1 1/2 cups shredded cheese
  • Cooking spray
  • Sour cream, optional for serving
  • Greek yogurt, optional for serving
  • Guacamole, optional for serving
  • Pico de gallo, optional for serving
  • Shredded lettuce, optional for serving
  • Extra salsa, optional for serving

Instructions

  1. In a medium saucepan over medium-high heat, combine water, lime juice, chili powder, cumin, and black pepper.
  2. Bring to a gentle boil, then add the shredded chicken and green onions. Reduce heat to medium and cook for about 5 minutes, stirring often, until heated through.
  3. In a microwave-safe bowl, combine the black beans and salsa. Microwave for about 30 seconds until warm.
  4. Lay the tortillas flat and place about 1/3 cup of the chicken mixture in the center of each tortilla.
  5. Top with the black bean mixture and sprinkle evenly with shredded cheese.
  6. Fold in the sides of the tortillas and roll tightly into burritos.
  7. Heat a large skillet or griddle over medium-high heat and coat lightly with cooking spray.
  8. Place the burritos seam-side down in the skillet and cook for 2 to 4 minutes per side until golden brown and crispy.
  9. Serve warm with desired toppings and side dishes.

Notes

  • Rotisserie chicken can be used for a faster preparation.
  • Whole wheat or low-carb tortillas work well in this recipe.
  • Freeze burritos individually wrapped for up to 3 months.
