Description
These chocolate covered raspberry jam bites are sweet, fruity, and coated in rich melted chocolate. Made with frozen raspberries, chia seeds, and peanut butter, they are an easy frozen treat perfect for snacking or dessert.
Ingredients
- 1 (300 g) bag frozen raspberries
- 1/4 cup chia seeds
- 1/3 cup peanut butter
- 1.5 cups chocolate chips (white or dark chocolate)
- 2 teaspoons coconut oil
Instructions
- In a medium microwave-safe bowl, add the frozen raspberries and microwave for about 1 minute until defrosted. Gently mash with a fork.
- Add the chia seeds and stir until combined. Let the mixture stand for about 3 minutes to thicken slightly.
- Line a baking tray or plate with parchment paper. Spoon the raspberry mixture into about 14 rounds using roughly 2 tablespoons per bite.
- Freeze the raspberry bites for at least 3 hours or until completely firm.
- Top each frozen raspberry bite with about 1/2 tablespoon peanut butter and return to the freezer for an additional hour.
- In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 30-second intervals, stirring between each, until smooth and melted.
- Dip each frozen raspberry bite into the melted chocolate and place back onto the parchment-lined tray. Allow the chocolate to harden before serving.
Notes
- Dark chocolate gives these bites a richer flavor, while white chocolate makes them sweeter.
- Keep the bites frozen or refrigerated for the best texture.
- Almond butter or sunflower seed butter can be substituted for peanut butter.
- Store in an airtight container in the freezer for up to 1 month.
