Description
A creamy, tangy cilantro lime cashew crema that’s dairy-free and perfect for drizzling over tacos, bowls, or salads.
Ingredients
- 1 cup raw cashews
- 3/4–1 cup water
- 2/3 cup cilantro
- 3 tablespoons lime juice (about 2 limes)
- 1/2–1 teaspoon salt
- 1 large clove garlic
Instructions
- Add the cashews to a bowl and cover with boiling water. Let soak for 30 minutes.
- Drain and rinse the cashews, then transfer to a high-speed blender.
- Add cilantro, lime juice, salt, garlic, and 3/4 cup of water.
- Blend until completely smooth, about 1 minute. Add more water as needed to reach desired consistency.
- Taste and adjust seasoning or lime juice as desired.
- Transfer to a sealed jar and store in the refrigerator for up to 2 weeks.
Notes
- For quicker prep, soak cashews in very hot water for 10-15 minutes if short on time.
- Add more water for a thinner, drizzle-friendly sauce.
- Great as a topping for tacos, roasted vegetables, grain bowls, or salads.
- Store in an airtight container in the fridge for freshness.
