Description

A creamy, tangy cilantro lime cashew crema that’s dairy-free and perfect for drizzling over tacos, bowls, or salads.


Ingredients

  • 1 cup raw cashews
  • 3/41 cup water
  • 2/3 cup cilantro
  • 3 tablespoons lime juice (about 2 limes)
  • 1/21 teaspoon salt
  • 1 large clove garlic

Instructions

  1. Add the cashews to a bowl and cover with boiling water. Let soak for 30 minutes.
  2. Drain and rinse the cashews, then transfer to a high-speed blender.
  3. Add cilantro, lime juice, salt, garlic, and 3/4 cup of water.
  4. Blend until completely smooth, about 1 minute. Add more water as needed to reach desired consistency.
  5. Taste and adjust seasoning or lime juice as desired.
  6. Transfer to a sealed jar and store in the refrigerator for up to 2 weeks.

Notes

  • For quicker prep, soak cashews in very hot water for 10-15 minutes if short on time.
  • Add more water for a thinner, drizzle-friendly sauce.
  • Great as a topping for tacos, roasted vegetables, grain bowls, or salads.
