Description
These dates and dry fruit rolls are naturally sweet, chewy, and packed with nuts and dried fruits. A wholesome no-bake snack that works perfectly for dessert or an energy boost.
Ingredients
- 2 cups seedless dates
- 1/2 cup almonds
- 1/2 cup cashews
- 1/4 cup pistachios
- 1/4 cup walnuts
- 2 tbsp sesame seeds
- 2 tbsp desiccated coconut
- 1 tbsp poppy seeds
- 1 tsp cardamom powder
- 1 tsp ghee
Instructions
- Dry roast the almonds, cashews, pistachios, and walnuts until lightly fragrant. Let them cool slightly and chop roughly.
- Heat ghee in a pan and add the dates. Cook on low heat until soft and sticky.
- Add the roasted nuts, sesame seeds, cardamom powder, and mix well until fully combined.
- Transfer the mixture onto a greased surface and shape into logs while still warm.
- Roll the logs in desiccated coconut and poppy seeds for coating.
- Allow the rolls to cool completely, then refrigerate for 30 minutes before slicing into rounds.
Notes
- You can substitute walnuts with pecans or more almonds.
- Store the rolls in an airtight container in the refrigerator for up to 2 weeks.
- For extra flavor, add a pinch of cinnamon or nutmeg.
- These rolls are naturally sweetened with dates and require no added sugar.
