Description

These dates and dry fruit rolls are naturally sweet, chewy, and packed with nuts and dried fruits. A wholesome no-bake snack that works perfectly for dessert or an energy boost.


Ingredients

  • 2 cups seedless dates
  • 1/2 cup almonds
  • 1/2 cup cashews
  • 1/4 cup pistachios
  • 1/4 cup walnuts
  • 2 tbsp sesame seeds
  • 2 tbsp desiccated coconut
  • 1 tbsp poppy seeds
  • 1 tsp cardamom powder
  • 1 tsp ghee

Instructions

  1. Dry roast the almonds, cashews, pistachios, and walnuts until lightly fragrant. Let them cool slightly and chop roughly.
  2. Heat ghee in a pan and add the dates. Cook on low heat until soft and sticky.
  3. Add the roasted nuts, sesame seeds, cardamom powder, and mix well until fully combined.
  4. Transfer the mixture onto a greased surface and shape into logs while still warm.
  5. Roll the logs in desiccated coconut and poppy seeds for coating.
  6. Allow the rolls to cool completely, then refrigerate for 30 minutes before slicing into rounds.

Notes

  • You can substitute walnuts with pecans or more almonds.
  • Store the rolls in an airtight container in the refrigerator for up to 2 weeks.
  • For extra flavor, add a pinch of cinnamon or nutmeg.
  • These rolls are naturally sweetened with dates and require no added sugar.
