Ingredients
- 1 broccoli head, including the stem
- 1½ cups shredded carrot
- 1 cup red cabbage, thinly sliced
- 1 cup Greek yogurt
- 1 to 2 tablespoons mayonnaise (optional)
- 2 to 3 tablespoons apple cider vinegar or lemon juice
- 1 tablespoon honey or maple syrup (optional)
- 1 tablespoon Dijon mustard
- ¾ teaspoon salt, plus black pepper to taste
- ¼ cup sunflower seeds or your favorite add-ins
Instructions
- Cut the broccoli head into very small bite-size pieces. Peel the thick outer layer from the broccoli stem, then shred or thinly slice the stem.
- Add the broccoli, shredded carrot, and sliced red cabbage to a large mixing bowl.
- In a small bowl, whisk together the Greek yogurt, apple cider vinegar or lemon juice, honey or maple syrup, Dijon mustard, salt, black pepper, and mayonnaise if using.
- Taste the dressing and adjust seasoning as desired. The dressing should taste slightly tangy and well seasoned.
- Pour the dressing over the vegetables and toss well until evenly coated.
- Stir in the sunflower seeds or any preferred add-ins.
- Let the slaw rest for 10 to 15 minutes before serving to soften the broccoli slightly and allow the flavors to meld together.

- For a vegan version, use dairy-free yogurt and maple syrup instead of honey.
- Add dried cranberries, chopped apples, or nuts for extra texture and flavor.
