Description

Ingredients

  • 1 broccoli head, including the stem
  • 1½ cups shredded carrot
  • 1 cup red cabbage, thinly sliced
  • 1 cup Greek yogurt
  • 1 to 2 tablespoons mayonnaise (optional)
  • 2 to 3 tablespoons apple cider vinegar or lemon juice
  • 1 tablespoon honey or maple syrup (optional)
  • 1 tablespoon Dijon mustard
  • ¾ teaspoon salt, plus black pepper to taste
  • ¼ cup sunflower seeds or your favorite add-ins

Instructions

  1. Cut the broccoli head into very small bite-size pieces. Peel the thick outer layer from the broccoli stem, then shred or thinly slice the stem.
  2. Add the broccoli, shredded carrot, and sliced red cabbage to a large mixing bowl.
  3. In a small bowl, whisk together the Greek yogurt, apple cider vinegar or lemon juice, honey or maple syrup, Dijon mustard, salt, black pepper, and mayonnaise if using.
  4. Taste the dressing and adjust seasoning as desired. The dressing should taste slightly tangy and well seasoned.
  5. Pour the dressing over the vegetables and toss well until evenly coated.
  6. Stir in the sunflower seeds or any preferred add-ins.
  7. Let the slaw rest for 10 to 15 minutes before serving to soften the broccoli slightly and allow the flavors to meld together.

  • For a vegan version, use dairy-free yogurt and maple syrup instead of honey.
