Description
A traditional Irish apple cake filled with tender spiced apples and served with a rich homemade vanilla custard sauce.
Ingredients
- 4 cups all-purpose flour
- 1 cup sugar + 3 tablespoons
- 1 tablespoon baking powder
- 1/2 teaspoon sea salt
- 1 1/2 teaspoons cinnamon
- 8 ounces cold unsalted butter
- 2 Granny Smith apples, peeled, cored, and diced
- 2 Golden Delicious apples, peeled, cored, and diced
- 4 large eggs
- 2 teaspoons vanilla extract
- 1 cup whole milk
- 4 egg yolks
- 1 cup whole milk
- 1/2 cup sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the flour, 1 cup sugar, baking powder, salt, cinnamon, and butter. Use a pastry cutter or knife to blend until the butter pieces are about the size of rice.
- Fold in the diced apples until evenly coated.
- In a separate bowl, whisk together the eggs, vanilla extract, and 1 cup milk. Add this mixture to the flour mixture and stir until a thick dough forms.
- Transfer the batter to a greased 9-inch springform pan and bake for 80 to 90 minutes, or until golden brown and firm in the center.
- Allow the cake to cool completely on a rack before slicing.
- For the custard, whisk the egg yolks in a bowl and set aside.
- In a saucepan, heat 1 cup milk and 1/2 cup sugar over medium heat until just beginning to boil.
- Slowly pour the hot milk mixture into the egg yolks while whisking constantly, then return the mixture to the saucepan over low heat. Stir continuously until thickened to a custard consistency.
- Remove from heat and whisk in the vanilla extract.
- Serve slices of cake with warm custard poured over the top.
