Description

A traditional Irish apple cake filled with tender spiced apples and served with a rich homemade vanilla custard sauce.


Ingredients

  • 4 cups all-purpose flour
  • 1 cup sugar + 3 tablespoons
  • 1 tablespoon baking powder
  • 1/2 teaspoon sea salt
  • 1 1/2 teaspoons cinnamon
  • 8 ounces cold unsalted butter
  • 2 Granny Smith apples, peeled, cored, and diced
  • 2 Golden Delicious apples, peeled, cored, and diced
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup whole milk
  • 4 egg yolks
  • 1 cup whole milk
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the flour, 1 cup sugar, baking powder, salt, cinnamon, and butter. Use a pastry cutter or knife to blend until the butter pieces are about the size of rice.
  3. Fold in the diced apples until evenly coated.
  4. In a separate bowl, whisk together the eggs, vanilla extract, and 1 cup milk. Add this mixture to the flour mixture and stir until a thick dough forms.
  5. Transfer the batter to a greased 9-inch springform pan and bake for 80 to 90 minutes, or until golden brown and firm in the center.
  6. Allow the cake to cool completely on a rack before slicing.
  7. For the custard, whisk the egg yolks in a bowl and set aside.
  8. In a saucepan, heat 1 cup milk and 1/2 cup sugar over medium heat until just beginning to boil.
  9. Slowly pour the hot milk mixture into the egg yolks while whisking constantly, then return the mixture to the saucepan over low heat. Stir continuously until thickened to a custard consistency.
  10. Remove from heat and whisk in the vanilla extract.
  11. Serve slices of cake with warm custard poured over the top.
