Description
These hearty lentil patties are packed with vegetables, herbs, and warming spices for a satisfying plant-based meal. Crispy on the outside and tender inside, they are perfect in wraps, subs, or served with salads.
Ingredients
- 2 cups brown lentils, dry
- 1 large yellow potato, peeled
- 1 red onion, peeled
- 1 carrot, peeled
- 4 1/2 cups vegetable broth, or enough to cover ingredients
- 1 cup breadcrumbs
- 1 cup parsley, chopped
- 1 tsp garlic powder
- 1 tsp paprika
- 1 tsp salt
- 2 tbsp avocado oil or olive oil
- Sub bread, for serving
- Tomatoes, for serving
- Lettuce, for serving
- Red onion, for serving
Instructions
- In a deep frying pan or large pot, combine the lentils, potato, red onion, and carrot. Pour in enough vegetable broth to cover the ingredients by at least 1 inch. Cover, bring to a boil, then reduce to a simmer and cook for about 40 minutes, adding more liquid if needed, until the lentils are soft and the potato is mashable.
- Transfer the cooked mixture to a large bowl and mash with a potato masher until thick and textured, similar to a chunky veggie burger mixture.
- Preheat the air fryer or oven to 400°F and line a baking sheet or tray with parchment paper.
- Add the breadcrumbs, parsley, garlic powder, paprika, salt, and oil to the lentil mixture. Mix thoroughly with clean hands until evenly combined.
- Shape the mixture into approximately 20 oval patties about the size of half your palm.
- Arrange the patties on the prepared tray and lightly spray with oil if desired.
- Air fry or bake for 12 to 13 minutes, flipping halfway through, until golden and crisp on the outside.
- Serve in wraps or sub rolls with tomatoes, lettuce, and red onion.
Notes
- Use gluten-free breadcrumbs to make the patties gluten free.
- If the mixture feels too wet, add extra breadcrumbs a little at a time.
- These patties freeze well after cooking and can be reheated in the oven or air fryer.
- Serve with hummus, tahini sauce, or your favorite burger toppings.
