Description

These hearty lentil patties are packed with vegetables, herbs, and warming spices for a satisfying plant-based meal. Crispy on the outside and tender inside, they are perfect in wraps, subs, or served with salads.


Ingredients

  • 2 cups brown lentils, dry
  • 1 large yellow potato, peeled
  • 1 red onion, peeled
  • 1 carrot, peeled
  • 4 1/2 cups vegetable broth, or enough to cover ingredients
  • 1 cup breadcrumbs
  • 1 cup parsley, chopped
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp salt
  • 2 tbsp avocado oil or olive oil
  • Sub bread, for serving
  • Tomatoes, for serving
  • Lettuce, for serving
  • Red onion, for serving

Instructions

  1. In a deep frying pan or large pot, combine the lentils, potato, red onion, and carrot. Pour in enough vegetable broth to cover the ingredients by at least 1 inch. Cover, bring to a boil, then reduce to a simmer and cook for about 40 minutes, adding more liquid if needed, until the lentils are soft and the potato is mashable.
  2. Transfer the cooked mixture to a large bowl and mash with a potato masher until thick and textured, similar to a chunky veggie burger mixture.
  3. Preheat the air fryer or oven to 400°F and line a baking sheet or tray with parchment paper.
  4. Add the breadcrumbs, parsley, garlic powder, paprika, salt, and oil to the lentil mixture. Mix thoroughly with clean hands until evenly combined.
  5. Shape the mixture into approximately 20 oval patties about the size of half your palm.
  6. Arrange the patties on the prepared tray and lightly spray with oil if desired.
  7. Air fry or bake for 12 to 13 minutes, flipping halfway through, until golden and crisp on the outside.
  8. Serve in wraps or sub rolls with tomatoes, lettuce, and red onion.

Notes

  • Use gluten-free breadcrumbs to make the patties gluten free.
  • If the mixture feels too wet, add extra breadcrumbs a little at a time.
  • These patties freeze well after cooking and can be reheated in the oven or air fryer.
