Description

These protein sugar cookies are soft, lightly sweet, and packed with protein for a better-for-you treat. Quick to make and perfect for a fun, colorful dessert.


Ingredients

  • 1/4 cup unsalted butter (melted)
  • 1 tablespoon brown sugar
  • 2 1/2 tablespoons white sugar
  • 3 tablespoons Greek yogurt
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/4 cup gluten free all purpose baking flour
  • 6 tablespoons vanilla protein powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3 tablespoons sprinkles (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Melt the butter and add it to a mixing bowl. Add brown sugar and white sugar, then whisk to combine.
  3. Whisk in Greek yogurt, egg, and vanilla extract until smooth.
  4. Add gluten free flour, protein powder, baking soda, and salt. Mix until well combined.
  5. Fold in the sprinkles.
  6. Use a medium cookie scoop to portion dough onto the prepared baking sheet. Gently press each cookie down slightly.
  7. Bake for 11–14 minutes or until the edges are lightly golden.
  8. Allow cookies to cool completely before serving.

Notes

  • Do not overbake to keep cookies soft and tender.
  • You can omit sprinkles or replace them with chocolate chips.
  • Different protein powders may affect texture; adjust slightly if dough seems too dry.
