Ingredients
- 1/4 cup unsalted butter (melted)
- 1 tablespoon brown sugar
- 2 1/2 tablespoons white sugar
- 3 tablespoons Greek yogurt
- 1 egg
- 1 teaspoon vanilla extract
- 1/4 cup gluten free all purpose baking flour
- 6 tablespoons vanilla protein powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 3 tablespoons sprinkles (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Melt the butter and add it to a mixing bowl. Add brown sugar and white sugar, then whisk to combine.
- Whisk in Greek yogurt, egg, and vanilla extract until smooth.
- Add gluten free flour, protein powder, baking soda, and salt. Mix until well combined.
- Fold in the sprinkles.
- Use a medium cookie scoop to portion dough onto the prepared baking sheet. Gently press each cookie down slightly.
- Bake for 11–14 minutes or until the edges are lightly golden.
- Allow cookies to cool completely before serving.
Notes
- Do not overbake to keep cookies soft and tender.
- You can omit sprinkles or replace them with chocolate chips.
- Different protein powders may affect texture; adjust slightly if dough seems too dry.
- Store in an airtight container for up to 3 days.
