Description
Shrikhand is a rich and creamy Indian yogurt dessert flavored with saffron and cardamom. This chilled sweet treat is smooth, aromatic, and garnished with pistachios for added texture.
Ingredients
- 2 lbs full-fat plain yogurt
- ¾ cup powdered sugar
- ½ teaspoon cardamom powder
- 1 big pinch saffron
- 2 teaspoons milk
- 1 pinch saffron for garnish
- 1 tablespoon pistachios, thinly sliced
Instructions
- Place a strainer over a medium-sized bowl and line it with cheesecloth.
- Pour the yogurt into the cheesecloth. Gather the ends, twist gently, and place a heavy weight on top to help drain the whey. Let it strain for 6 to 8 hours.
- Once strained, reserve the liquid whey for baking or dough preparation if desired.
- Warm the milk in the microwave for 10 to 15 seconds. Add saffron and let it bloom for a few minutes.
- Transfer the thick strained yogurt to a dry bowl and mix in the saffron-infused milk.
- Add the powdered sugar and stir well with a spatula for 5 to 10 minutes until smooth and fully combined.
- Mix in the cardamom powder. Garnish with additional saffron and sliced pistachios.
- Refrigerate for at least 30 minutes before serving.
- Before serving, gently stir the Shrikhand to distribute the saffron color evenly.
Notes
- Use full-fat yogurt for the creamiest texture.
- Straining the yogurt overnight gives the thickest and richest consistency.
- Serve chilled for the best flavor and texture.
- You can add chopped almonds or rose water for variation.
