Description

Shrikhand is a rich and creamy Indian yogurt dessert flavored with saffron and cardamom. This chilled sweet treat is smooth, aromatic, and garnished with pistachios for added texture.


Ingredients

  • 2 lbs full-fat plain yogurt
  • ¾ cup powdered sugar
  • ½ teaspoon cardamom powder
  • 1 big pinch saffron
  • 2 teaspoons milk
  • 1 pinch saffron for garnish
  • 1 tablespoon pistachios, thinly sliced

Instructions

  1. Place a strainer over a medium-sized bowl and line it with cheesecloth.
  2. Pour the yogurt into the cheesecloth. Gather the ends, twist gently, and place a heavy weight on top to help drain the whey. Let it strain for 6 to 8 hours.
  3. Once strained, reserve the liquid whey for baking or dough preparation if desired.
  4. Warm the milk in the microwave for 10 to 15 seconds. Add saffron and let it bloom for a few minutes.
  5. Transfer the thick strained yogurt to a dry bowl and mix in the saffron-infused milk.
  6. Add the powdered sugar and stir well with a spatula for 5 to 10 minutes until smooth and fully combined.
  7. Mix in the cardamom powder. Garnish with additional saffron and sliced pistachios.
  8. Refrigerate for at least 30 minutes before serving.
  9. Before serving, gently stir the Shrikhand to distribute the saffron color evenly.

  • Use full-fat yogurt for the creamiest texture.
  • Straining the yogurt overnight gives the thickest and richest consistency.
  • Serve chilled for the best flavor and texture.
  • You can add chopped almonds or rose water for variation.
