Description

Crispy on the outside and tender on the inside, these cubed air fryer sweet potatoes are quick, flavorful, and perfect as a healthy side dish.


Ingredients

  • 1 large sweet potato, scrubbed and cleaned
  • 2 teaspoons avocado oil (or avocado oil spray)
  • Salt, to taste
  • Freshly ground black pepper, to taste

Instructions

  1. Prick the sweet potato all over with a fork. Place it on a microwave-safe plate and microwave for 5 minutes (4 minutes for a medium or small potato) until slightly tender but not fully cooked. Let it cool for 5 minutes, then cut into 1-inch cubes.
  2. Place the cubes in a mixing bowl and toss with avocado oil, or transfer directly to the air fryer basket and spray with avocado oil spray. Season with salt and freshly ground black pepper.
  3. Air fry at 400°F (200°C) for 8–10 minutes, shaking the basket halfway through, until the potatoes are tender and lightly browned on the edges. Serve immediately.
