Description

Traditional Tilachi Poli is a sweet Maharashtrian flatbread filled with roasted sesame seeds, jaggery, and warm spices. Soft whole wheat dough wraps around the rich nutty filling for a festive and comforting treat.


Ingredients

  • 1 cup brown sesame seeds
  • 2 tablespoons white poppy seeds
  • 1 cup grated jaggery
  • 1 tablespoon chickpea flour (besan)
  • 1 tablespoon peanuts (roasted and ground, optional)
  • 1 teaspoon ground cardamom
  • 1/4 teaspoon ground nutmeg
  • 2 cups whole wheat flour (sieved)
  • 1/2 cup whole wheat flour (for rolling)
  • 1 teaspoon salt
  • 1 cup milk (lukewarm, plus more if needed)
  • 1 pinch saffron
  • 1 tablespoon oil
  • 2 tablespoons ghee

Instructions

  1. To make the filling, roast the sesame seeds in a medium pan over medium heat for 2 to 3 minutes until fragrant. Transfer to a bowl.
  2. In the same pan, roast the chickpea flour for 1 minute on low to medium heat and add it to the sesame seeds.
  3. Roast the poppy seeds for 1 to 2 minutes and transfer them to the same bowl. Let all roasted ingredients cool completely.
  4. Grate the jaggery using a grater or food processor.
  5. Add the roasted sesame seeds, besan, poppy seeds, peanuts, cardamom, and nutmeg to the food processor with the jaggery. Process for 1 to 2 minutes until finely ground and evenly combined.
  6. To make the dough, combine whole wheat flour, saffron, and salt in a large bowl.
  7. Add lukewarm milk gradually and knead into a soft dough. Add oil and knead again until smooth. Cover and rest for 20 minutes.
  8. Knead the dough again for 2 minutes and divide into 12 to 15 dough balls.
  9. Dip one dough ball lightly in dry flour and roll into a 4-inch circle.
  10. Place 1 to 2 tablespoons of filling in the center. Gather the edges to seal the filling inside.
  11. Flatten gently, dust with flour, and roll carefully into a 5 to 6-inch circle.
  12. Heat a frying pan or griddle over medium heat and cook the poli on both sides until golden brown spots appear.
  13. Apply a few drops of ghee on both sides while cooking. Remove and keep warm.
  14. Repeat with the remaining dough and filling. Serve warm.

Notes

  • Roasting the sesame seeds properly enhances the nutty flavor.
  • Use gentle pressure while rolling to prevent the filling from spilling out.
  • Tilachi Poli tastes best served warm with extra ghee.
  • Store leftovers in an airtight container for up to 2 days.
